*****This one gets 5 stars. These ribs just don't get any better.
Every time I cook these, I am asked for the recipe.
They are so so so delicious!!!! And they smell amazing!!!
****I sometimes just run over to Starbucks and grab a 2 shot espresso. It is exactly 1/4 cup so its perfect.
INGREDIENTS
Chop 3 0r 4 Garlic cloves up fine
Put olive oil in pan
Add garlic
Cook just until golden yellow, then turn heat off
Garlic will finish cooking after heat is off so don't over cook this
Add ketchup
Add honey
Add balsamic vinegar and soy sauce
Add espresso
Cook on low heat for 15 minutes.
Remove from heat and let cool for at least 15 minutes.
(I make mine in the morning and then reheat it when I am ready to use it.)
Pre-heat smoker on high
(When you first open it after pre-heating it, it will read closer to 300 or 350, but you want to get it around 225)
Smells amazing!!
After 3 hours remove ribs
Have sheets of Heavy Duty reynolds wrap ready.
I use two sheets per each meat.
I cook mine with the meaty side
down so it lays in the sauce
I fold sides in first
This one gets no sauce
It's for my Sammy Boy!
Put back in smoker for 1 1/2 hours
Here's the recipe:
SMOKED BABY BACK RIBS WITH ESPRESSO SAUCE
Serves 4 to 6
6 lbs pork baby back ribs
( I use anywhere between 5 and 10 lbs)
Sea salt
Ground black pepper
Season ribs with salt and pepper
Put in smoker and smoke for 3 hours at 225 degrees in pre-heated smoker.
Use hickory chips the first 2 hours.
After 3 hours, remove ribs, baste generously with espresso sauce
Wrap in heavy duty reynolds wrap.
Return to smoker and cook for addtional 1 to 1 1/2 hours.
If you have a puppy that is going to eat these, don't put espresso sauce on his or hers. Trust me on this. You don't want too!! Leave that sauce off. If you do, rinse well with water before feeding to dog or cat.
Monkey and lion are the exception!!
OPTIONAL: During the last 10 minutes, remove ribs from foil and baste again.
Place back in smoker directly onto wire rack, allowing the ribs to caramelize.
(I have never ever gotten to do this last part, because I can't put the ribs on the rack without them falling apart. They are so tender the meat falls off the bone. )
Yum! Yum! Yum!
And they go super with Tom's kick-ass Margaritas =)
Transfer to serving dish and serve hot.
I made some smoked potatoes to go with the ribs.

If you aren't going to use your potatoes right away,
put them in ice water and they won't turn brown on you.
Spread your potatoes on reynolds wrap
Add some onion
and I used 4 fresh minced garlic
Some garlic salt,

Soak wood chips in water at least 30 minutes.
(I try to leave them soaking for at least 1 hour)
Fill the wood chip box full
Fill the water pan full
Salt and pepper ribs
Put ribs in smoker quickly and close door to keep heat in
Cook for 3 hours at about 225, give or take some
Our friends, Solie and Tom came over so in went some more ribs
Peeked in-Lookin good.
(Try not to open door if you don't have to)

2 tablespoons extra virgin olive oil
2 tablespoons minced garlic
1 cup ketchup
1 cup honey
1/2 cup balsamic vinegar
1/4 cup soy sauce
1/4 cup Starbucks double shot espresso, (if you order a 2 shot espresso at Starbucks, it comes out to exactly 1/4 cup) or strong home-brewed coffee
(I use Instant espresso coffee and make it hot and strong)
In a medium saucepan, combine olive oil and garlic.
Cook on medium heat until golen. Remove from heat and let the garlic cool in the oil.
Whisk in the ketchup, honey, vinegar, soy sauce, and espresso.
Return to heat and simmer for 15 minutes to blend flavors. Remove from heat.
