Warm Spinach Salad with Olive Oil and Garlic

This salad is very easy to make and is pretty good. It just seemed to be missing something. I think next time I make this, I will add some red onions, and pine nuts. That would flavor it up

 a bit. But I will make this again. Don loves spinach and I like it cooked. Not my favorite raw, so this works well. 


INGREDIENTS:


Mince garlic


Put chicken broth in large pan


Add garlic
cook to a simmer

Put lid on and cook for 10 minutes



Sex and the City


Add olive oil


cook for a few seconds

Add spinach

Put on plate

Add cheese



RECIPE:
1/4 cup chicken broth
2 tablespoons minced garlic(4 cloves)
1 tablespoon olive oil
2 tablespoon balsamic vinegar
Pinch of salt
Pepper to taste
8 cups spinach
2 tablespoons grated Parmesan Cheese

DIRECTIONS:
Add chicken broth and garlic to a large saute pan and place over medium heat. Bring to a simmer. Reduce the heat to medium low, cover and cook for 10 inutes to soften and mellow the garlic. (Chicken broth should reduce no more than half)

Whisk in the olive oil, balsamic vinegar, salt and pepper. Turn off the heat and add the spinach. Using tongs, quickly toss the spinach in warm dressing just until coated. Immediately transfer to serving plates.

Top with the grated Parmesan Cheese and serve.
