Perfect Pan Seared Scallops Review!!

Perfect Pan Seared Scallops
These get 4 stars. Super quick dinner and Super easy. Very tasty. Be careful not to overcook these or they will taste 

rubbery. I only know because I have been cooking scallops forever. These were very tender and oh, so good. These are very good, even without the butter. Just be careful not to over salt these. I would say they don't need any salt but you can be the judge of that. 

INGREDIENTS:





Place scallops on paper towel 




Pat dry



Salt and pepper scallops

Put oil in large skillet over high heat



Cook for about 2 minutes and turn


Cook for about 3 minutes more and remove


 
Put scallops on plate


I put it with Shrimp cocktail and a Salad,
Very healthy meal

RECIPE:
Makes 4 servings
16 sea scallops, about 11/4 pounds
salt and pepper to taste
4 teaspoons canola oil

DIRECTIONS:
Place the scallops on a paper towel-lined plate and pat dry. Season with salt and pepper.

Heat 2 teaspoons of the oil in a very large nonstick skillet over high heat. When oil is very hot  (just prior to smoking) Place half of the scallops in the skillet, at least 1/2 inch apart from each other. Cook for about 2 minutes, or until underside is evenly browned. Turn the scallops and cook the second side for 1 to 2 minutes, or until the scallops have become firm on the sides, but the center third is still lightly opaque.Place scallops on plate. 

Wipe the skillet with paper towels. Add the remaining oil and turn heat to high. When oil and pan are hot again, add the remaining dried scallops and cook for 1 to 2 minutes., or until the underside is browned. Turn the scallops and cook second side 1 to 2 minutes or until the scallops have become firm on the sides but the center third is slightly opaque.

Place all of the scallops back in the pan and cook for 30m to 45 seconds, or until just cooked through.
**I cooked all mine at the same time.**
