OVEN FRIED CHICKEN
This chicken is crispy, and delicious. It has a great crunch to it and the cayenne pepper adds a nice flavor to it. I don't like
anything spicy and this isn't. Just full of flavor. It was just a little dry. I think next time, I will inject it with Tony Chachere's Creole Style butter marinade. No sugar, no fat.
INGREDIENTS:
Preheat oven to 400 degrees
In shallow bowl put egg whites
garlic powder
onion powder
cayenne pepper
ground sage
died thyme
mix well-set aside
Crush cereal and put in bowl
Add breadcrumbs
(I use Pankos)
add pepper
Add salt
Mix well
Put flour in shallow bowl
(I use white wholewheat flour)
Coat chicken in flour
Dredge chicken in egg white mixture
Coat chicken with crumb mixture
Put on pan or wire rack
Bake at 400 degrees for 45 minutes
Remove from oven

RECIPE:
2 large egg whites
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon cayenne pepper
1/2 teaspoon ground sage
1/4 teaspoon dried thyme
114 cups cornflake cereal
1/4 cup plain breadcrumbs
(I use Panko)
1/2 teaspoon black pepper
1/2 teaspoon salt
2 tablespoon all purpose flour
(I use white wholewheat flour)
11/2 pounds skinned chicken pieces such as 2 legs, 2 thinghs and 1 large chicken breast cut in half.
(I use 3 chicken breasts)
DIRECTIONS:
Preheat oven to 400 degrees. Place a wire rack on top of a baking sheet and spray with cooking spray.
In a shallow bowl, whisk together the egg whites with the garlic powder, onion powder, cayenne pepper, sage, and thyme.
Place cereal in plastic bag and crush thoroughly with a rolling pin. Place in a shallow bowl and mix together with the breadcrumbs, pepper, and salt.
Place the flour in a third shallow bowl.
To bread the chicken pieces, first dredge the chicken in the flour to coat. Next, dip each piece into the egg white mixture, followed by the crumb mixture, making sure to cover all surfaces. Repeat until all chicken is coated.
Place the chicken pieces on the prepared rack and bake for 45 minutes, or until the chicken is golden brown.
