Delectable Coconut Custard Review!!

Delectable Coconut Custard
This is an excellent dessert. I love coconut, and this did not disappoint. Delicious. Trying to only eat one is the problem here.  But I did. If you like custard and coconut, you should try 

this. Healthy and Delicious together. A great pair!!

INGREDIENTS:

Put eggs and egg whites in bowl


Add sweetener


Add vanilla


Coconut extract




Blend well- set aside


 In saucepan, pour evaporated milk


Add ow fat milk
(I use skim)


Put a teaspoon of cooconut in bottom of custard cup








Bring milk to simmer


Pour small amount into egg mixture


Whisk together


Add rest of milk


Pour into custard cups


Put cups in baking dish


Pour hot water up to half way on cups




Bake in oven


on 325 degrees for 45-55 minutes


Remove from oven and let cool
Then refrigerate to set


Sprinkle with toasted coconut before serving

RECIPE:
Makes 4 servings

2 large eggs
2 large egg whites
2/3 cup Splenda granulated sweetener
1 teaspoon vanilla extract
1/2 teaspoon coconut extract
1(12 0z ) can low-fat evaporated milk
(I used fat free)
11/2 cups low fat milk
1/4 cup tasted shredded coconut
( reserve 2 tablespoon for garnish)

DIRECTIONS:

Preheat oven to 325 degrees

In a medium bowl, whisk together the eggs, egg whites, sweetener, vanilla, and coconut extracts. Set aside.

In a small saucepan, bring the milks to a low simmer. Whisk a small amount of the hot milk into egg mixture to temper the eggs. Whisk in the remaining milk. Pour the mixture into a large measuring cup with a spout. 

Sprinkle 1 teaspoon of the coconut into each 6 ounce custard cups. Pour the custard mixture into the cups on top of the coconut. Set the cups in a large baking dish and place in oven.
Pour very hot water into the baking dish until the water reaches halfway up the sides of the custard cups. 

Bake the custard for 45 to 55 minutes, or until edges are set and centers jiggle slightly when shaken. Cool and refrigerate to set. Top each cup with 1 teaspoon of toasted coconut before serving.
(I toasted my coconut in the toaster oven)
