Romaine Salad with Avocado Ranch Dressing

This is a very very good salad. I didn't think I would like the red roasted peppers but I did. They are really good. And the 

black beans go well in it also. The avocado dressing that goes with this is very creamy and tasty. 

INGREDIENTS:

Put avoacado in blender bowl


Add buttermilk


Add yogurt


Add garlic powder



 
Add onion powder


Add salt


Pepper


Blend well

 
Set aside

in large bowl add lettuce


Roasted red peppers


Black beans


Mix well


Pour half the avocado dressing on lettuce


Mix Well 

ENJOY!

RECIPE:
Makes 4 servings

DRESSING
1/2 medium avocado, pitted and peeled
1/2 cup buttermilk
3/4 cup plain non fat yogurt
1/2 teaspoon garlic powder 
1/2 teaspoon onion powder
1/8 teaspoon salt
1/4 teaspoon pepper

SALAD
6 cups chopped romaine lettuce or hearts of romaine
1/2 cup roasted red pepprs (jarred) cut into 1/2 inch pieces1.4 cup black beans drained and rinsed

DIRECTIONS:

To make dressing, combine the avocado, buttermilk, yogurt, garlic powder, onion powder, salt and pepper in a food processor or blender. Process until smooth.

For the salad, in large bowl, toss thogether the romaine lettuce, peppers, and black beans. Add one half of the dressing and toss lightly.
