Parmesan Garlic Smashed Potatoes Review!!

PARMESAN GARLIC SMASHED POTATOES
THESE GET 5 STARS BECAUSE THEY ARE JUST SO DELICIOUS.  VERY EASY TO MAKE. MUCH HEALTHIER THAN TRADITIONAL MASHED POTATOES. NO 

BUTTER!!  THE ONLY PROBLEM I FIND WITH THESE IS TO FORCE YOURSELF TO LEAVE THEM ALONE AND NOT EAT THE WHOLE BOWL. SO SO GOOD.

INGREDIENTS:

Put potatoes and garlic in boiling water

When soft, drain 


Add sour cream

Add  fresh parmesan cheese

Add half and half or low fat milk

Mash  together

ENJOY!!

RECIPE:

11/2 pounds Yukon Gold potatoes cubed (about 6 medium potatoes)
(I cooked mine whole)
6 garlic cloves, peeled
1/4 cup light sour cream
1/4 cup freshly grated Parmesan (1/2 ounce)
1/3 cup nonfat half and half or low fat milk warmed
salt and pepper to taste

DIRECTIONS:

Place potatoes and garlic in large pot of water and bring to a boil. Simmer 20 minutes or until potatoes are fork tender. Drain the potatoes and garlic and place in large bowl.

Add the sour cream, cheese, and most of the milk. Using a potato masher or large fork, smash until smooth. Add the remaining milk to reach desired consistency. Season with salt and pepper.
