Natasha's Cafe Black Bean Soup
This is getting 3-1/2 stars because while it was very good and very healthy, I have made black
bean soup that wasn't so time consuming, and just as good. But if you have the time, if you like black beans, you will like this recipe.
Ingredients:
Soak beans overnight in refrigerator
Rinse beans
Put in large pan
Add water and cook until tender
Slice carrots and celery
I decided to chop my carrots
and celery
core end of tomato
barely cut an x on top of tomato
drop in boiling water for 20 seconds
immediately drop in ice water
peel back skin
Easy! Then I chopped the tomatoes
When beans are soft, add carrot and celery
Add wine vinegar
In other skillet saute onions and green peppers
until brown
Add to beans
Add tomatoes
Add spices
Add water as needed
Pour in bowl
Add sour cream
I also added chopped green onions

RECIPE:
Ingredients
- 4 cup Dry Black Beans
- 8 cup water
- 2 carrots, sliced
- 4 stalks celery, sliced
- 2 onions, diced
- 2 green peppers, diced
- 4 tomatoes, blanched, skinned and chopped
- how to blanch tomatoes
- 5 cloves garlic, crushed
- 1 teaspoon red wine vinegar
- Basil, Oregano, and Thyme
Instructions
Soak dried black beans in water overnight, rinse and cover with 1 quart of water in large pot or kettle. Cook over medium heat until tender. Add water as needed to maintain 1o water level. Add sliced carrots, celery and vinegar (optional). Saute onions and green peppers and garlic in wok until browned. Add to pot. Add tomatoes and cook until carrots are tender. Add salt, pepper and spices to taste. Garnish with a dab of sour cream.
I put it with a cold glass of skim milk, and a hot ham
and provolone cheese on pumpernickel.
