Le Cafe Ile St. Louis Onion Soup Gratinee
This soup has really good flavor. Don really liked it. I needed to melt the cheese more but my bowls couldn't
go under the broiler. I will be getting some crocks. This was easy to make and very tasty.
Ingredients
Melt butter
Add onions
Caramelize the onions
Add wine
Add chicken broth
Add beef broth
Add thyme and bay leaf
Add salt and pepper
Bring to boil
Simmer for 30 minutes
Toast bread
Put soup in bowl
Add toast
Add cheese-put in oven to melt cheese

Ingredients
- 1 pound onion, julienned
- 2 ounces butter
- 4 ounces white wine
- 1/2 gallon chicken stock
- 1/2 gallon beef stock
- 1 sprig thyme
- 1 bay leaf
- Sliced toasted bread
- Sliced Gruyere cheese
- Salt and pepper, to taste
Instructions
In a hot skillet, add butter and onions. Caramelize the onions. Deglaze with 4 ounces white wine and reduce. Add the chicken stock, beef stock, thyme, and bay leaf. Bring to a boil and simmer for 30 minutes. Adjust taste if needed. Pour soup into bowl and cover with the toasted bread and cheese. Place under broiler until cheese is melted and golden brown.
Enjoy!!
I put it with a ham and swiss on french bread, toasted
with a cold glass of milk.
