Warm Lettuce Salad with Olive Oil and Garlic
(Used lettuce from my garden)
This is a really good salad and a great way to use up my lettuce in my garden. I do think this could be better with onions, and some pine nuts or 


almonds in it. I will try that next time. This is a very quick salad to make.  Yes, I will make this again. 

Ingredients:




saute garlic with vegetable broth

Add olive oil, vinegar, salt and pepper

Stir together

Add lettuce and quickly toss

Remove to plate

Add fresh grated parmesan cheese

Enjoy!

RECIPE:
1/4 cup chicken broth
2 tablespoons minced garlic(4 cloves)
1 tablespoon olive oil
2 tablespoon balsamic vinegar
Pinch of salt
Pepper to taste
8 cups lettuce
2 tablespoons grated Parmesan Cheese

DIRECTIONS:
Add chicken broth and garlic to a large saute pan and place over medium heat. Bring to a simmer. Reduce the heat to medium low, cover and cook for 10 inutes to soften and mellow the garlic. (Chicken broth should reduce no more than half)

Whisk in the olive oil, balsamic vinegar, salt and pepper. Turn off the heat and add the lettuce. Using tongs, quickly toss the spinach in warm dressing just until coated. Immediately transfer to serving plates.

Top with the grated Parmesan Cheese and serve.




Put this with leftover 
Almond Herb Crusted Pork Tenderloin
(best tenderloin ever, review is up for it)
 and hominy.

Hi Shannon,
Very simple and easy to make. Very yummy. You can add other things to it if you want to. I think green onions would be good in it. :)
