Best Cream of Broccoli Soup Review!




Best  Cream of Broccoli Soup
This broccoli soup was very good but really needed some salt. While this was good, I have had much better Broccoli Soup. I did add a 


little crumbled bacon and cheese on top of it. 

Ingredients:


Melt butter in pan


Add onions and celery



Saute until tender


Add broccoli



Add broth


Put lid on and simmer for 10 minutes
(I didn't puree the broccoli so I let it simmer for 30-40 minutes)

Melt butter in small pan


Add flour and stir

Add milk


Cook and stir until thickened and bubbly

Pour into broccoli mixture




Simmer and serve

Enjoy!

Recipe:
Original recipe makes 6 servings

2 tablespoons butter
1 onion, chopped
1 stalk celery, chopped
3 cups chicken broth
8 cups broccoli florets
3 tablespoons butter
3 tablespoons all-purpose flour
2 cups milk
ground black pepper to taste
(I added a little salt-just thought it needed it)

Directions
 Melt 2 tablespoons butter in medium sized stock pot, and saute onion and celery until tender. Add broccoli and broth, cover and simmer for 10 minutes.
Pour the soup into a blender, filling the pitcher no more than halfway full. Hold down the lid of the blender with a folded kitchen towel, and carefully start the blender, using a few quick pulses to get the soup moving before leaving it on to puree. Puree in batches until smooth and pour into a clean pot. Alternately, you can use a stick blender and puree the soup right in the cooking pot.
In small saucepan, over medium-heat melt 3 tablespoons butter, stir in flour and add milk. Stir until thick and bubbly, and add to soup. Season with pepper and serve.

Your last picture looks so yummy. Too bad the recipe wasn't your favorite. :( I love B&C soup, so I'd probably eat it all!

Hi Mededith, It was very good. I just have had better. I should have put cheese in it but the recipe didn't call for it. Think that was the difference. Enjoy your day. :)
