Pressure Cooker Chili

I have talked to several people about pressure cooking food. I am always amazed that so many think the pressure cooker is taboo when it comes to making a delicious meal. 


I do understand their fear about the cooker exploding or blowing up in their face. I had the same thoughts and for years, I refused to use one also. But today, the pressure cookers have so many safety 


features on them, it is nearly impossible for one to explode.

I have decided to cook and share some of my recipes I am using in the pressure cooker. I love that you can put in a frozen chicken, pork or beef and 3o minutes later have a wonderful dinner. You can just throw in spices, veggies, potatoes, or whatever you wish and in just a little bit, dinner is served. 

The first thing I am going to share is my Pressure Cooker Chili. Not two or 3 hours simmering it. Once pressure is up, it is ready in as little as 25 minutes YUM!




Pressure Cooker Chili
This Chili is easy to make and very delicious. Don's word for it was, "awesome". He loves it. You can make it your own by adding in things you like or taking out things you don't like. More or less spices. I love that this only cooks in less than 3o minutes. Quick, easy, delicious. Three of my favorite things in a dish. 

INGREDIENTS:


Put olive oil in bottom of cooker and heat up


Add onions, yellow and red bell pepper. Cook 
about 4-6 minutes 


Add garlic. Cook for a couple more minutes


Add hamburger and italian sausage


Break up with spoon


Cook until brown


Add chili powder


Oregano


and cumin



Mix in 

Add tomato paste 
beer
3 kinds of beans

Mix well



Set pressure cooker for 25 minutes


Delicious meal. Just add shredded cheese, chopped green onions, and sour cream if desired. 

Recipe:
Pressure Cooker Chili

2 tablespoons olive oil
1 large red onion, diced
1 medium red bell pepper, diced
1 medium yellow bell pepper, diced
4 cloves garlic, chopped
1 pound lean ground beef
8 ounces Italian sausage, casing removed (I buy it already ground up)
1/4 cup chili powder
1 tablespoon ground cumin
1 tablespoon dried oregano
One 4-ounce can tomato paste
One 12-ounce bottle beer
One 28-ounce can diced tomatoes ( I use Rotel diced tomatoes with green chiles)
One 14-ounce can diced tomatoes ( I use diced tomatoes with rosemary and oregano)
One 15-ounce can black beans, drained and rinsed
One 15-ounce can kidney beans, drained and rinsed
One 15-ounce can chili beans, drained and rinsed ( I used mild)
Garnishes:
Shredded Cheddar
Sour cream
Chopped green onions
Directions
Add the olive oil to cooker.  Once hot, add the onions and peppers and saute until soft, about 4 minutes. Add the garlic and saute until just fragrant. Stir in the beef and sausage, breaking it up with the back of a wooden spoon, and cook until browned, about 6 minutes.

Drain the beef mixture through a colander if needed. Add it back to the cooker and stir in the chili powder, cumin and oregano. Stir the tomato paste into the beef mixture Cook for about 2 minutes. ; this will "toast" it and give the chili more flavor. Add the beer and stir up any browned bits on the bottom of the pan. then add the diced tomatoes and beans. Put lid on cooker and set for 25 minutes. 

Remove lid, serve and enjoy!
Top with shredded cheese, sour cream and chopped green onions before serving.
