OVEN FRIED ZUCCHINI ROUNDS
These are very healthy and tasty, and are easy
to make. I have made them several times and they are always good.
INGREDIENTS:
Preheat oven to 400 degrees
I use this grill pan. It works as well as a wire rack
Spray with Pam
Put breadcrumbs in bowl
Add fresh parmesan cheese
Add oregano
Add garlic salt
Mix together
In separate bowl beat whites with
Water
Slice zucchini
Dip zucchini in egg whites
Then into the breadcrumb mixture
Put on pan
Bake at 400 degrees for 8 minutes
(I baked mine for about 12 minutes)
(Next time I am going to try it at 450 degrees)
Remove from oven
Enjoy!!
RECIPE:
MAKES 4 SERVINGS
1/3 CUP PLAIN BREADCRUMBS
(I USED PANKOS)
1/4 CUP FRESHLY GRATED PARMESAN CHEESE
1/2 TEASPOON DRIED OREGANO
1/2 TEASPOON GARLIC SALT
2 LARGE EGG WHITES, LIGHTLY BEATEN
1 TABLESPOON WATER
21/2 CUPS ZUCCHINI SLICES, CUT 1/8 INCH THINK ON THE DIAGONAL (\
(ABOUT 2 ZUCCHINI)
DIRECTIONS:
PREHEAT OVEN TO 400 DEGREES. PLACE A WIRE RACK ON TOP OF A BAKING SHEET AND SPRAY WITH COOKING SPRAY.
IN A WIDE, SHALLOW BOWL, MIX TOGETHER THE BREADCRUMBS, PARMESAN, OREGANO, AND GARLIC SALT.
IN A SEPARATE BOWL, BEAT TOGETHER THE EGG WHITE AND WATER.
DIP EACH ZUCCHINI SLICE INTO THE EGG MIXTURE, THEN ROLL IN BREADCRUMBS. PLACE ONTO THE WIRE RACK AND REPEAT UNTIL ALL OF THE ZUCCHINI HAS BEEN COATED.
LIGHTLY SPRAY TOP WITH COOKING SPRAY AND BAKE FOR 8 MINUTES.
SERVE HOT.
