Winter Salad Review!!

Winter Salad
                                                   

Super healthy, and  great flavor. Love the fruits in this. A great combination of salad and fruit. Will make this one again. Delicious!! Then only thing I didn't add was the persimmons. I 

don't care for raw persimmons. I do think adding some mandarin oranges would really be good. 

Ingredients:

One of these romaine hearts makes about 6 cups. 

Chop lettuce

Shred cabbage



Chop Apple


Chop Pear

Add pomegranate

Add red wine vinegar

Add honey

mix well


I couldn't find hazelnuts so I used pine nuts.  I will probably toast them next time.


Ingredients

6cups chopped romaine lettuce
4cups sliced red cabbage
1large Fuji apple, halved, cored, diced
1Asian pear, halved, cored, diced
2Fuyu persimmons, peeled, seeded, diced
½cup pomegranate seeds
Optional – toasted hazelnuts, coarsely chopped
Dressing
¼cup red wine vinegar
½tablespoon honey
¼cup hazelnut oil – [sub extra-virgin olive oil if desired]

Directions

 In a large bowl, combine romaine, red cabbage, Fuji apple, Asian pear, Fuju persimmons and pomegranate seeds; toss to mix.
In a small bowl, whisk together vinegar and honey. Gradually whisk in oil. Season with salt and pepper.Add dressing to the salad mixture and toss to coat.Divide salad among plates. Sprinkle with toasted hazelnuts, if desired, and serve.Enjoy!Serves about 8 – or 4 if you want more for yourself.
