Smoked Prime Rib Review!

Smoked Prime Rib
Six stars!! Yes, it's that good. This is super juicy, very very tasty, and so so tender. It just doesn't 


get any better than this. Amazing flavor.


Ingredients



 Put prime rib in pan



Puu all ingredients in small bowl

Mix well

Pat rub all over prime rib Let sit for 30-40 minutes

Take prime rib out of pan 



 put water and wood in smoker

Put prime rib, fat side up, on rack

I put the prime rib on bottom rack , potatoes on middle rack and corn on top rack.
That way the butter from butter from the potatoes will slowly fall onto rib. That can't be bad. 

Remove from smoker  


Wrap in reynolds wrap for 20=30 minutes.
(Take rib out of smoker 30 minutes before it is where you want it. It will keep cooking in the reynolds wrap. Keep this in mind when smoking)
Slice and serve!


Recipe:
4- 6 pound Prime Rib
¼ tablespoon onion powder
1/8 tablespoon garlic powder
1 tablespoon black pepper
1 tablespoon white pepper
1 tablespoon paprika
1 tablespoon red pepper flakes
1 tablespoon  kosher salt

I only got about 2 and a half pounds for just Don and I..
I smoked it about and hour and a half. Perfect!!



                           Directions:
Place prime rib in a large pan
In a bowl, combine all of the dry ingredients and mix well.
Season roast with the mixture and let stand for 30 to 45 minutes

 Load the wood try with one small handful of wood chips and preheat the smoker to 250 degrees F


Place roast, fat side up, direct on rack in smoker

           Reduce temperature to 225 degrees f and add more wood chips

Add extra wood chips every 1 to 1 ½ hours during cooking time
Using meat thermometer to check temperature, cook until desired temperature is reached. For a medium done prime rib, you want to smoke it 1 hour per pound.
Once you have removed the prime rib, cover it with foil and let it rest for 15 to 20 minutes before cutting
               This will help keep the prime rib warm and juicy

Doneness
125 Rare
135 Medium Rare
145 Medium
155 Medium Well
165 Well done
 (I don't recommend Well done for prime rib.)
 For medium rare to medium the cooking time is approximately 4-6 hours. (1 hour per pound) 
 I used boneless . If you have the bone in it will take longer to  smoke.


I served this with smoked corn and smoked potatoes with garlic and onions
