Pressure Cooker Chili 2
Don said he would love to have a bowl of chili. I just used what I had and it came out delicious. I love cooking one pot meals. It sure makes clean up very easy and quick. I used a large can of
rotel tomatoes with green chilis and also 2 tablespoons of chili powder. While Don loved it, it was a little to spicy for me. I have never been a "spice girl" so next time I will only add a small can of rotels, and only 1 tablespoon of chili powder. I am sure this will be even better tomorrow.
***(If you don't have a pressure cooker just make it in a large pot on stovetop. Cook on low for about an hour)
Ingredients:
Put ground beef, onions, and
garlic in pressure cooker
Brown until onions are clear
and beef browned
Add everything else and stir,
put lid on
Pressure cook for 15 minutes
Let pressure off and serve
Pressure Cooker Chili 2 Recipe:
Makes approximately 8 servings
2 pounds ground beef
1 onion, finely diced
- 3 cloves garlic, minced
- 1 large can Rotel tomatoes with green chilis
- 1 (14.5 ounce) can fire roasted diced tomatoes
- 1 (14.5 ounce) cans Italian-style diced tomatoes
- 1 (8 ounce) can tomato sauce
- half of small can of tomato paste
- 1 bottle dark beer
- 1 (15 ounce) can kidney beans
- 1 (15 ounce) can pinto beans
- 2 tablespoons chili powder
- 1 tablespoon ground cumin
- 2 tablespoons white sugar
- 1 tablespoon salt
- 1 teaspoon ground black pepper
Directions
- In a pressure cooker lightly brown ground beef, and drain if needed.
- Add onion and garlic and cook until onion is translucent.
- Add tomatoes, diced tomatoes with chili peppers, tomato sauce, water, kidney beans, pinto beans, chili powder, cumin, sugar, salt, pepper and hot sauce. Pressure cook for 12-15 minutes and then serve.
I served this with peanut butter
sandwiches and carrots.
